Drabbelkoek or in English sludge cake is a round, brittle cake and is known as a specialty from Sneek.
Drab biscuits have been baked in Friesland since around 1700. [source?] Drab biscuits are made from wheat flour, butter, milk and sugar. The cake is made by dribbling strings of dough through butter.
The Haga factory is located in Sneek, which has been making sludge cakes since 1850. The cakes are sold in traditional tins with a Frisian sjees and the Waterpoort.
